Aunt Billie's Peach Ice Cream

Ingredients

  • 2-1/4 cups granulated sugar
  • 2-1/2 tbsp cornstarch
  • 3 eggs
  • 4-1/2 cups whole milk
  • 1 pint heavy cream
  • 2 tbsp. vanilla extract
  • 1/2 tsp almond extract
  • 3 cups fresh peaches, pureed and sweetened

Instructions

Heat 4 cups of the milk to a slow boil. In a separate bowl, mix the sugar and cornstarch together. Beat the 3 eggs with the remaining 1/2 cup milk, and add to the sugar and cornstarch mixture. Add this mixture of eggs, milk, sugar and cornstarch to the hot milk and mix well. Cook for 3-4 minutes.

Remove from the heat; let the custard mixture cool and it will begin to thicken. After the custard has cooled, add the heavy cream and flavorings. Mix well. Add the sweetened pureed peaches and freeze in your ice cream maker as recommended by the manufacturer. Makes one gallon.
